Pistachio Mallow Salad

Yield:
12 servings

Ingredients:

  1. 1 container (16 oz.) frozen whipped topping, thawed
  2. 1 package (3.4 0z.) instant pistachio pudding mix
  3. 6-7 drops of green food coloring (optional)
  4. 3 cups miniature marshmellows
  5. 1 can (20 oz.) crushed pineapple, undrained
  6. 1/2 cup pistachios or walnuts (chopped)
Directions:

In a large bowl, combine the whipped topping, pudding mix and food coloring if desired. Fold in the marshmallows and pineapple.

Cover and refrigerate for at least 2 hours. Just before serving, sprinkle with nuts.
