Crunchy Pea Salad

6-8 servings

Ingredients:

  1. 1 package (10 oz.) frozen petite peas
  2. 1 cup celery, diced
  3. 1 cup cauliflower, chopped
  4. 1 cup cashews, chopped
  5. 1/4 cup green onions, diced
  6. 1/4 cup crisp-cooked crumbled bacon
  7. 2 tablespoons pimentos, chopped
  8. 3/4 cup ranch dressing
  9. 1/4 cup sour cream
  10. 1/2 teaspoon Dijon mustard
Directions:

Rinse frozen peas in hot water; drain. Combine peas, celery, cauliflower, cashews, onions, bacon and pimientos in a large bowl.

Whisk together dressing, sour cream and mustard in a small bowl; pour over salad mixture. Toss gently. Chill.
