Pepperoni Pizza Soup

A low carb recipe

Ingredients:

  1. 1 tablespoon oil
  2. 1/2 cup onion, chopped
  3. 1 cup mushrooms, sliced
  4. 1 cup green bell pepper, chopped
  5. 1 jar (15 oz.) pizza sauce
  6. 1 can (14.5 oz.) chicken broth
  7. 1 cup water
  8. 1 teaspoon dried oregano
  9. 3 ounces pepperoni, sliced
  10. 1 cup mozzarella cheese, shredded
Directions:

Heat oil in large saucepan over medium heat. Add onion, mushrooms and bell pepper. Cook, stirring frequently, until tender, about 7 minutes.

Stir in pizza sauce, chicken broth, water, oregano and pepperoni. Bring to a boil. Lower heat; simmer 5 minutes. Top each serving with cheese.
