Pan Fried Sole

Yield:

Ingredients:

  1. 4 (8 oz. each) sole fillets
  2. 1/2 cup Parmesan cheese, grated
  3. 1/2 cup bacon flavored crackers, crushed
  4. 1/2 cup cornmeal
  5. 1/2 teaspoon garlic salt
  6. 1/2 teaspoon pepper
  7. 1/2 cup milk
  8. 1/2 cup vegetable oil
Directions:

Rinse fish and pat dry with paper towels. In a shallow bowl, combine the cheese, cracker crumbs, cornmeal, garlic salt and pepper.

In another bowl, beat eggs and milk. Dip fish in the egg mixture, then gently roll in the crumb mixture.

In a skillet, fry fish in oil for 5-7 minutes or until fish flakes easily with a fork, turning once.
