Roasted Tarragon Asparagus

Ingredients:

  1. 1-1/2 lbs. fresh asparagus, trimmed
  2. 2-3 tablespoons olive or vegetable oil
  3. 1/2 teaspoon coarsely ground pepper
  4. 1/8 teaspoon salt
  5. 1-1/2 teaspoons minced fresh tarragon or 1/2 tsp. dried tarragon
Directions:

Place asparagus in a shallow baking dish coated with nonstick cooking spray. Drizzle with oil; sprinkle with pepper and salt. Toss to coat. Bake, uncovered, at 450 degrees for 13-15 minutes or until crisp-tender, turning occasionally.

Sprinkle with tarragon.
