In a large mixing bowl stir mayonnaise, yogurt, pepper and salt to combine.
Add grapes, celery, almonds and chicken and stir to combine.
Place sliced apples into a glass filled with lemon lime soda to prevent browning. Pat dry before placing in sandwich.
Open croissant and layer with lettuce, apple slices, 1/3 cup chicken salad and more lettuce.
