Peach Glazed Cake

Yield:
10-12 servings

Ingredients:

  1. 1 can (15 oz.) pear halves, drained
  2. 1 pkg. white cake mix
  3. 3 eggs
  4. 1 jar (12 oz.) peach preserves, divided
  5. peaches, fresh and sliced
Directions:

In a blender, process pears until pureed. Transfer to a mixing bowl, add the cake mix and eggs. Beat on medium speed for 2 minutes. Pour into a greased and floured 10 inch fluted tube pan.

Bake at 350 degrees for 30-35 minutes. Cool for 10 minutes before removing to a wire rack to cool.

In a microwave bowl, heat 1/2 cup peach preserves, uncovered, on high for 60-90 seconds or until melted. Slowly brush over warm cake. Slice cake; top with peaches. Melt remaining preserves; drizzle over top.
