Herb Roasted Chicken with Lemon Rice

Ingredients:

  1. 2 cups cooked rice
  2. 2 tablespoons fresh parsley
  3. 1 teaspoon lemon peel, shredded
  4. 3-1/2 lbs. broiling chicken
  5. 1 pkg. (3 oz.) cream cheese, softened
  6. 1 teaspoon dried basil leaves
Directions:

Mix rice, parsley, and lemon peel. Stuff chicken cavities with rice mixture. Tie drumsticks to tail. Place chicken, breast side up, in shallow baking pan.

Mix cream cheese and basil. Spread cream cheese mixture over breast of chicken. Roast in 375 degree oven for 1 1/2 hours or until meat juices run clear.
