Chicken With Fennel

Ingredients:

  1. 3-1/2 lbs. broiling chicken
  2. 1/2 stick butter, softened
  3. 1-1/2 teaspoon dried basil
  4. 1 teaspoon parsley flakes
  5. 1/2 teaspoon fennel seed
  6. 1/2 teaspoon pepper
Directions:

Place chicken, breast side up, in shallow baking pan. Mix remaining ingredients. Spread butter mixture over breast. Roast, uncovered, in 375 degree oven for 1- 1/2 hours or until internal meat juices run clear.
