Easy Brunch Frittata

Ingredients:

  1. 1 cup small broccoli florets
  2. 1 package (12 oz.) frozen hash brown potatoes with onions and peppers, thawed
  3. 1-1/2 cups egg substitute
  4. 2 tablespoons milk
  5. 1/2 teaspoon salt
  6. 1/4 teaspoon pepper
  7. 1/2 cup cheddar cheese, shredded
  8. dollop, sour cream
Directions:

Preheat oven to 450 degrees. Coat ovenproof skillet with cooking spray. Heat skillet over medium heat. Add broccoli; cook and stir 2 minutes.

Add potatoes; cook and stir 5 minutes.

Beat together egg substitute, milk, salt and pepper; pour over mixture. Cook 5 minutes or until edges only are set.

Transfer to oven; bake 6 minutes or until center is set.

Remove from oven. Sprinkle with cheese; let stand 2-3 minutes or until cheese is melted.
