Roasted Red Pepper Grilled Cheese Sandwich

Ingredients:

  1. 1 Tablespoon prepared Italian salad dressing
  2. 2 slices Italian bread
  3. 1/3 cup roasted red peppers, rinsed, drained and patted dry
  4. 2 slices mozzarella cheese
Directions:

Brush salad dressing on one side of one slice of bread; top with peppers, cheese and second bread slice.

Lightly spray both sides of sandwich with cooking spray.

Heat skillet over medium heat until hot. Place sandwich in skillet and grill 4 to 5 minutes on each side or until golden brown and cheese is melted.
