Roasted Pepper Salsa

Ingredients:

  1. 1 jar (2 oz.) roasted red peppers, drained and chopped
  2. 1 teaspoon garlic, minced
  3. Salt to taste
  4. Pepper to taste
  5. 1/2 teaspoon olive oil
  6. 2 tablespoons lime juice
  7. 1/2 cup onion, diced
  8. 1/2 cup green chilies, diced
  9. 1/2 cup parsley, finely chopped
Directions:

In a bowl, combine peppers, garlic, salt, pepper, olive oil and lime juice. Add onions, chilies and parsley; mix well. Cover and refrigerate at least 4 hours before serving to blend flavors. Serve with tortilla chips.
