Stuffed Potatoes For Two

Ingredients:

  1. 2 medium baking potatoes
  2. 1/2 cup sour cream
  3. 4 ounces cheddar cheese, shredded
  4. 1/2 cup broccoli, chopped
  5. 1/2 cup artichoke hearts, marinated and chopped
  6. 2 tablespoons bacon, cooked and crumbled
  7. 1/2 teaspoon garlic salt
  8. 1/4 teaspoon pepper
Directions:

Place potatoes on microwave plate; pierce several times with fork. Cook on HIGH for 6-8 minutes or until tender. When cool enough to handle, cut a thin slice off the top of each potato and discard. Scoop out pulp of each, leaving a thin shell.

In a bowl, mash the pulp with sour cream. Stir in the cheese, broccoli, artichokes, bacon, and seasonings. Spoon into potato shells. Microwave, uncovered, on HIGH for 1-2 minutes or until heated through.
