Mediterranean Tuna Pasta

Ingredients:

  1. 1 package (16 oz.) penne pasta
  2. 1 can (12 oz.) chunk light tuna, drained
  3. 1 can (15 oz.) chickpeas, drained
  4. 1 can (14 oz.) diced tomatoes with basil, garlic and oregano
  5. 1 medium zucchini, sliced 1/4 inch thick
  6. 2 tablespoons ripe olives, sliced
  7. 1/2 cup Parmesan cheese
Directions:

Cook pasta according to package directions; drain.

In a large skillet, combine tuna, chickpeas, tomatoes, zucchini and olives. Bring to a boil, stirring constantly. Reduce heat and simmer, uncovered for 5 minutes. Spoon mixture over hot pasta; top with cheese.
