Lentil Sausage Soup

Ingredients:

  1. 1 lb. bulk Italian sausage
  2. 13 cups water
  3. 1 cup carrots, chopped
  4. 1/2 cup celery, chopped
  5. 2 teaspoons onion powder
  6. 3/4 teaspoon dried oregano
  7. 1/2 teaspoon garlic powder
  8. 1/2 teaspoon dried basil
  9. 1/2 teaspoon seasoning salt
  10. 1/2 teaspoon pepper
  11. 2 cups dry lentils, rinsed
  12. 1/2 cup long grain rice, uncooked
  13. 1 can (15 oz.) tomato sauce
  14. 1 can (8 oz.) tomato sauce
  15. 2-1/2 cups frozen cheese tortellini
Directions:

Crumble and cook sausage in skillet until done; drain. In a Dutch oven, combine water, carrots, celery, onion powder, oregano, garlic powder, basil, salt and pepper. Add lentils and rice. Bring to a boil; reduce heat; cover and simmer for 20 minutes or until lentils and rice are tender.

Stir in tomato sauce; return to a boil. Add Tortellini. Cook for 3-4 minutes or until tortellini are tender.
