Honey Balsamic Vinaigrette

Ingredients:

  1. 1/2 cup canned apricots, drained
  2. 1/3 cup balsamic or red vinegar
  3. 1/4 cup honey
  4. 2 teaspoons Dijon mustard
  5. 1 clove garlic, minced
  6. 1 teaspoon dry Italian seasoning
  7. 1/4 teaspoon salt
  8. 1/4 teaspoon pepper
  9. 1 tablespoon olive oil
Directions:

In blender or food processor, combine apricots, vinegar, honey, mustard, garlic and seasonings; blend until smooth. With motor running, slowly drizzle in olive oil until combined.
