Mexican Beef Burgers

Ingredients:

  1. 2 eggs, beaten
  2. 2 cans (4 oz. each) green chilis, chopped
  3. 1/4 cup onion, finely minced
  4. 1/3 cup salsa
  5. 1 teaspoon salt
  6. 1/2 teaspoon pepper
  7. 1 clove garlic, minced
  8. 3/4 cup corn chips, finely crushed
  9. 2 lbs. ground beef
  10. 8 (10 inch) flour tortillas, warmed
  11. Toppings:
  12. tomatoes, chopped
  13. ripe olives, chopped
  14. cheddar cheese, shredded
  15. lettuce, shredded
  16. salsa
  17. sour cream
Directions:

In a bowl, combine eggs, green chilis, onion, salsa, salt, pepper and garlic. Add chips and beef; mix well. Shape into eight patties.
Pan-fry, grill or broil until no longer pink. Wrap burgers and desired toppings in tortillas.
