Coach's Coconut Pie

Ingredients:

  1. 2 cups milk
  2. 2 egg yolks
  3. 1/3 cup sugar
  4. 1/3 cup flaked coconut
  5. 1 teaspoon vanilla
  6. 1 prepared 9 inch pie shell
  7. 4 egg whites
  8. 3 tablespoons confectioner's sugar
Directions:

Combine milk, egg yolks and sugar in a saucepan over medium heat; bring to just boiling. Add coconut and vanilla and continue stirring over a simmer until mixture begins to thicken.

Pour into a pie shell and refrigerate for at least 2 hours. After pie is set; preheat broiler for 10 minutes. Whip egg whites and confectioner's sugar until peaks are very stiff. Spread over set pie and broil for just a minute or two or until peaks begin to brown. Chill before serving.
