No Cook Summer Kabobs

Ingredients:

  1. 2 cups fresh cauliflower florets
  2. 1 medium red bell pepper, cut into 1-inch pieces
  3. 1 medium cucumber, halved lengthwise and cut into 1 inch pieces
  4. 1/2 lb. fully cooked smoked sausage, cut into 1-inch pieces
  5. 1 bottle (8 oz.) zesty Italian salad dressing
Directions:

In large bowl, combine cauliflower, bell pepper, cucumber, sausage and Italian dressing; mix well. Cover and refrigerate for at least 2 hours. Alternately thread sausage and vegetables onto skewers; Discard remaining marinade and serve at once.
