Vegetable Rice Skillet

Ingredients:

  1. 1 can (14 oz.) vegetable broth
  2. 2 tablespoons butter
  3. 1 pkg. (16 oz.) frozen California blend vegetables
  4. 1 pkg. (6.2 oz.) fast cooking long grain and wild rice mix
  5. 3/4 cup cheddar cheese, shredded
Directions:

In a large skillet, bring broth and butter to a boil. Stir in the vegetables and rice with seasoning packet. Return to a boil. Reduce heat; simmer, covered, for 4-8 minutes or until vegetables are tender. Sprinkle with cheese.
