Easy Tex Mex Rice

Ingredients:

  1. 2 cups cooked brown rice
  2. 1-1/2 cups salsa
  3. 1 can (15 oz.) black beans, drained
  4. 1 cup frozen corn, thawed
  5. 2 tablespoons ripe olives, sliced
  6. 1 teaspoon chili powder
  7. 4 ounces cheddar cheese, shredded
Directions:

In a bowl, combine rice, salsa, beans, corn, olives and chili powder. Transfer to a greased microwave safe 8-inch square dish. Cover and microwave on HIGH for 5 minutes. Stir; Microwave for 2-3 minutes more or until heated through. Sprinkle with cheese;
Microwave for 30-60 seconds to melt cheese.
