Rotini With Basil And Ricotta

Ingredients:

  1. 1 container (15 oz.) ricotta cheese
  2. 1/4 cup Parmesan cheese, grated
  3. black pepper
  4. 2 large tomatoes, cut into thin wedges
  5. 2 tablespoons olive oil
  6. 1/2 teaspoon salt
  7. 1 pkg. (16 oz.) Rotini pasta
  8. 2 tablespoons fresh basil leaves, slivered
Directions:

Whisk ricotta, Parmesan and pepper to taste in large serving bowl. In separate bowl, combine tomatoes, olive oil and salt.

Cook pasta according to package directions. Remove 1/4 c. cooking water and stir into ricotta mixture. Drain pasta; add to ricotta mixture with tomatoes and basil; mix well and serve at once.
