Ranch Tuna Stuffed Tomatoes

Ingredients:

  1. 1 can (6 oz.) solid white tuna, drained
  2. 1 can (8 oz.) kidney beans, rinsed and drained
  3. 1 can (8 oz.) whole kernel corn, drained
  4. 4 ounces cheddar cheese, shredded
  5. 2/3 cup ranch dressing
  6. 1/4 cup green onion, chopped
  7. 4 large fresh tomatoes
Directions:

Flake tuna and combine with beans, corn, cheese, dressing and onions in a medium bowl. Cover and chill 1 hour.

Just before serving, core tomatoes and scoop out center to within 1/4 inch of edge, forming a bowl; discard flesh and seeds. Cut each tomato into wedges, leaving bottom of tomato intact. Gently open each tomato to support the salad. Arrange tuna mixture on top of the tomatoes.
