Spinach Feta Burgers

Ingredients:

  1. 1/2 lb. ground beef, shaped into 2 patties
  2. 2 cups packed spinach leaves
  3. 4 green onions, sliced
  4. 2 tablespoons water
  5. 2 tomato slices
  6. 2 toasted hamburger buns
  7. 2 tablespoons feta cheese, crumbled
  8. salt to taste
  9. pepper to taste
Directions:

Mix spinach, onions and water in medium saucepan. Cover and bring to a boil. Cook for 1 minute or until spinach is wilted.

Grill the burgers to desired doneness. Place tomatoes and burgers on bottom half of buns; top with spinach mixture and Feta cheese. Season with salt and pepper to taste.
