Chicken Patties

Ingredients:

  1. 2 cups cooked chicken, shredded
  2. 15 saltine crackers, crushed
  3. 1/3 cup mayonnaise
  4. 4 green onions, finely chopped
  5. 2 tablespoons lemon juice
  6. 1/2 teaspoon pepper
  7. 2 tablespoons vegetable oil
Directions:

In a bowl, combine the chicken, cracker crumbs, mayonnaise, onions, lemon juice and pepper. Shape into 6 patties. Heat oil in large skillet; fry patties over medium heat for 2-3 minutes on each side or until golden brown.
