Crunchy Seafood Salad

Atkins Diet Recipe

Ingredients:

  1. 1 can (6 oz.) chunk white tuna
  2. 1 can (6 oz.) crabmeat
  3. 1 can (5 oz.) shrimp
  4. 1 package (16 oz.) salad greens
  5. 1 cup celery, diced
  6. 1/2 cup green onions, diced
  7. 1/2 medium avocado, diced
  8. 1/2 cup walnuts, chopped
  9. 1/2 cup soybeans, roasted and unsalted
  10. 1/2 cup sunflower seeds
  11. 2 hard cooked eggs, diced
  12. 1 tomato, cut into wedges
Directions:

Drain the seafood. Combine tuna, crabmeat and shrimp; refrigerate.

In a large salad bowl, combine salad greens, celery, onions, avocado, walnuts, soybeans, sunflower seeds and eggs. Toss well. Add seafood and toss again. Add salad dressing of your choice; garnish with tomato wedges.
