Shrimp Fettuccine

Ingredients:

  1. 1 pkg. (12 oz.) uncooked fettuccine
  2. 2 lbs. medium shrimp, uncooked and peeled*
  3. 1/2 cup butter
  4. 1/4 cup fresh parsley, minced
  5. 2 cloves garlic, minced
  6. 2 Tablespoons lemon juice
  7. 2 Tablespoons chicken broth
  8. 1/2 teaspoon salt
  9. 1/2 teaspoon pepper
Directions:

Cook fettuccine according to package directions.

In a large skillet, saute shrimp in butter for 4 minutes. Add the parsley, garlic, lemon juice, broth, salt and pepper. Cook and stir for 2 minutes or until garlic is tender. Drain fettuccine; top with shrimp mixture.

*If you prefer to use cooked ready to eat shrimp, add the shrimp to the butter mixture at the same time the garlic is added and stir for 2 minutes until warm.
