Peach Upside-Down Cake

Ingredients:

  1. 3 tablespoons margarine
  2. 1/2 cup packed brown sugar
  3. 1 1/2 cups fresh peach slices
  4. 1/3 cup margarine
  5. 2/3 cup granulated sugar
  6. 1 egg
  7. 1/2 teaspoon vanilla
  8. 1-1/2 cups flour
  9. 1/2 teaspoon baking powder
  10. 1/2 teaspoon salt
  11. 1/2 cup milk
Directions:

Melt 3 tablespoons margarine in 8- or 9-inch ovenproof skillet or layer pan; sprinkle with brown sugar. Arrange fruit in skillet.

In mixing bowl, cream 1/3 cup margarine and granulated sugar until light and fluffy. Blend in egg and vanilla.

Add combined dry ingredients alternately with milk, mixing well after each addition. Carefully pour batter over fruit.

Bake at 350 F. , 40-45 minutes or until wooden pick inserted in center comes out clean. Immediately invert onto serving platter.

Variation: Substitute 16-oz. can peach slices, drained, for fresh peaches.
