Fruit Nut Balls

Yield:
Makes about 18 balls.

Ingredients:

  1. 1 cup golden seedless raisins
  2. 1 cup dried apricots
  3. Water
  4. 1 cup whole natural almonds
  5. 1/2 cup shredded coconut, toasted
  6. 1 to 2 tablespoons honey
  7. Powdered sugar
Directions:

Combine raisins and apricots in saucepan with water to partially cover. Simmer, covered, 5 minutes. Drain. Put fruits and almonds through food chopper, using medium blade. Add coconut and honey and mix throroughly. Shape into balls. Roll in powdered sugar.
