Cantaloupe with Honey Lime Dressing

Yield:
Serves 4

Ingredients:

  1. 3 cups cantaloupe, cut into chunks
  2. 1/2 cup lite sour cream
  3. 1/4 cup honey
  4. 1/4 cup lime juice
  5. 1 teaspoon lime zest
  6. Fresh mint sprigs for garnish or thinly sliced lime
Directions:

In a mixing bowl whisk together sour cream, honey, lime juice, and lime zest. Pour over cantaloupe and toss gently. Spoon into serving dishes and top with a thin slice of lime or sprig of fresh mint.

-Ripe or cut melons should be stored in the refrigerator and used within 3 days.

-1/4 of a medium cantaloupe has only 56 calories, is fat-free, low in sodium and a good source of Vitamins A and C and potassium.
