Pecan Pie

National Pecan Pie Day - July 12

Ingredients:

  1. 3 eggs
  2. 1 cup light or dark corn syrup
  3. 1 cup granulated sugar
  4. 2 Tablespoons butter, melted
  5. 1 teaspoon vanilla extract
  6. 1/8 teaspoon salt
  7. 1 cup whole pecans
  8. 1 9-inch unbaked pie crust
Directions:

Preheat oven to 350 degrees F

Beat eggs slightly in a small bowl with mixer at medium speed.

Beat in corn syrup, sugar, butter, vanilla extract and salt; stir in pecans. Pour filling into unbaked pie crust.

Bake for 55 to 65 minutes or until knife inserted halfway between center and edge comes out clean. Cool.

Serve with whipped cream or vanilla ice cream.
