Trout with Italian Crumb Topping

Makes 4 servings

Ingredients:

  1. 1/3 cup Italian seasoned fine dry bread crumbs
  2. 2 Tablespoons shredded Parmesan cheese
  3. 2 Tablespoons butter, softened
  4. 1 clove garlic, minced
  5. 1 teaspoon finely shredded lemon peel
  6. 2 Tablespoons pine nuts
  7. 4 (4 to 5 oz.) trout fillets
Directions:

1. Preheat grill to medium. In a small bowl combine bread crumbs, Parmesan cheese, butter, garlic, lemon peel and pine nuts.

2. Place fish on a greased grill rack over medium heat. Spoon crumb mixture on top of fish; spread slightly.

3. Grill, covered, for 5 minutes per ½-inch thickness or until fish flakes easily when tested with a fork.
