Walnut Meringue Pie

Yield:
Makes 8 servings

Ingredients:

  1. 3 egg whites, room temperature
  2. 1/4 teaspoon salt
  3. 1/2 teaspoon baking powder
  4. 1 cup granulated sugar
  5. 1 teaspoon vanilla extract
  6. 2/3 cup broken walnuts
  7. 20 Ritz Crackers, broken in fourths
  8. 4 cups cut-up fresh fruits in season, or canned, very well-drained
  9. 1/2 cup heavy cream, whipped, unsweetened
Directions:

Beat egg whites until soft peaks form. Add salt and baking powder. Gradually beat in sugar; continue beating until stiff and glossy. Add vanilla extract. Lightly fold in next two ingredients. Spread mixture over bottom and sides of well-greased pie plate. Build up sides. Bake in preheated slow oven ( 325 F. ) 25 to 30 minutes. Cool completely on wire rack. Just before serving, fill center with fruit. Serve cream separately.
