Carrots in Onion Sauce

Yield:
Makes 4 servings

Ingredients:

  1. 1/4 cup finely chopped onion
  2. 2 tablespoons oil
  3. 2 cups diced carrots, cooked and drained
  4. 1/3 cup Pet Evaporated Milk
  5. 1/4 teaspoon salt
  6. Few grains pepper
Directions:

Cook onion in hot oil over medium heat until tender. Stir in carrots, evaporated milk, salt, and pepper. Cook over low heat stirring gently until sauce coats the carrots and is slightly thickened. Serve hot.
