Sirloin Steak with Fresh Tomato Sauce

Ingredients:

  1. 2 pounds ripe tomatoes, peeled and chopped coarsely
  2. 2 Tablespoons olive oil, divided
  3. 4 cloves garlic, sliced
  4. Salt to taste
  5. Pepper to taste
  6. 1/2 teaspoon dried oregano
  7. Fresh chopped basil or parsley to taste
  8. 6 small boneless beef sirloin steaks pounded to 1/4- inch thick
Directions:

Season steaks with salt and pepper and set aside.

Cook tomatoes, 1 Tbsp olive oil, and garlic until tomatoes are soft and begin to give off their juice. Add oregano and fresh basil (or parsley) and simmer.

In a separate pan, heat remaining 1 Tbsp olive oil and saute steak to the desired stage of doneness.

Spread the tomato sauce over steaks, cover the pan and heat for about 3 minutes longer. Serve immediately.
