Mediterranean Orzo Salad

4 - 6 servings

Ingredients:

  1. Salad:
  2. 1 cup orzo pasta
  3. 1 can ( 2 1/4 oz. ) sliced ripe olives, rinsed and drained
  4. 1 cup diced red bell pepper
  5. 1/4 cup crumbled feta cheese
  6. Dressing:
  7. 1 packet (1 oz.) Hidden Valley Original Ranch Salad Dressing and Recipe mix
  8. 3 tablespoons olive oil
  9. 3 tablespoons red wine vinegar
  10. 1 teaspoon sugar
  11. 1/2 teaspoon dried basil
Directions:

Cook orzo according to package directions, OMITTING salt. Drain; rinse with cold water. Mix orzo, olives, red pepper and feta cheese in a large bowl. Whisk together dressing mix, oil, vinegar, sugar and basil. Stir dressing into orzo mixture. Cover and refrigerate at least 2 hours.
