Grilled Strip Steak and Italian Vegetables

Ingredients:

  1. 2 teaspoons olive oil
  2. 1/2 teaspoon dried Italian seasoning
  3. 1 yellow squash, sliced diagonally into 3/4- inch pieces
  4. 1 zucchini squash, sliced diagonally into 3/4- inch pieces
  5. 2 Tablespoons grated Parmesan cheese
  6. 2 (1 1/4 pounds) boneless strip steaks, cut 1- inch thick
  7. Salt, to taste
  8. Pepper, to taste
Directions:

Combine oil and seasoning; brush on squash. Sprinkle with cheese.

Place beef steaks on grate over medium heat. Place squash around steaks. Grill steaks, uncovered, 15 to 18 minutes for medium rare to medium doneness, turning occasionally. Grill squash until tender, turning occasionally.

Carve steaks; season with salt and pepper. Serve with squash.

To Broil:
Place steaks on rack in broiler pan so surface of beef is 3 to 4- inches from heat. Place squash around steaks. Broil steaks 13 to 17 minutes for medium rare to medium doneness, turning once. Broil squash until tender, turning as needed.
