Zesty California Stuffed Shells

Ingredients:

  1. 40 jumbo pasta shells, cooked according to package directions and drained well
  2. 3 cups cooked turkey breast, diced
  3. 3 green onions, minced
  4. 1/4 cup crystallized ginger, finely minced
  5. 1/4 cup carrots, finely diced
  6. 1/4 cup sliced almonds
  7. 2 medium ripe pears, diced
  8. 1/3 cup mayonnaise
  9. 1/4 cup goat cheese
  10. 1 Tablespoon lemon juice
  11. Salt (to taste)
  12. Freshly ground pepper (to taste)
  13. Garnish with watercress
Directions:

Combine turkey, green onion, ginger, carrots, almonds and pears in a bowl.

Whisk together the mayonnaise, cheese, and lemon juice until well blended. Stir into the turkey mixture and toss to coat. Season to taste with salt and pepper.

Stuff each shell with 1 to 2 tablespoons of the filling.

Arrange on a platter and garnish with watercress.
