Creamy Crab Stuffed Shells

Ingredients:

  1. 30 jumbo shell pasta, cooked according to package directions and drained well
  2. 12 ounces crab meat
  3. 1 Tablespoon green bell pepper, finely chopped
  4. 1 Tablespoon red onion, finely chopped
  5. 3 Tablespoons butter (divided)
  6. 1 teaspoon seafood seasoning
  7. 1 egg
  8. 2 cups milk (divided)
  9. 1/2 cup mayonnaise
  10. 2 Tablespoons flour
  11. 1/2 cup Parmesan cheese, grated
  12. 1/2 teaspoon pepper
Directions:

Preheat oven to 350 degrees F

While pasta is cooking, saute green pepper and onion in 1 tablespoon melted butter until tender.

Combine the crab meat, pepper seafood seasoning, egg, 2 tablespoons milk, vegetables, and mayonnaise. Spoon mixture into shells.

Spray the bottom of a 9 x 13- inch casserole dish with cooking spray. Place stuffed shells in dish in a single layer.

Melt 2 tablespoons of butter in saucepan. Over low flame, stir in flour with a wire whisk and gradually add 1 1/2 cups of milk. When sauce is smooth, stir in Parmesan cheese. Drizzle sauce over shells. Sprinkle top with additional seafood seasoning. Bake for 30 minutes or until bubbling.
