Antipasto Tuna Salad

Ingredients:

  1. 1 package (8 ounce) penne pasta, cooked according to package directions
  2. 2 cups fresh broccoli florets
  3. 2 cans (6 ounce) water packed albacore tuna, drained and flaked
  4. 1 jar (6.25 ounce) marinated artichoke hearts, drained
  5. 1/2 pint grape tomatoes, halved
  6. 1 red bell pepper, sliced into thin strips
  7. 1/2 cup red onion, diced
  8. 1 can (2.25 ounce) sliced black olives, drained
  9. 1 bottle Italian salad dressing
  10. freshly ground black pepper
Directions:

Rinse the cooked penne pasta with cold water and set aside to cool.

Into a large bowl, add broccoli, tuna, artichoke hearts, tomatoes, bell pepper, onion, and olives. Gently toss to combine.

Add 1/8 cup Italian salad dressing to the pasta and toss to combine. Spread pasta onto a large serving platter.

Spoon the broccoli mixture over the pasta and sprinkle with freshly ground black pepper.

Serve with the Italian dressing on the side.
