Chewy Cherry Pistachio Cookies

Yield:
Makes 4 1/2 dozen cookies

Ingredients:

  1. 1 cup butter, room temperature
  2. 3/4 cup granulated sugar
  3. 3/4 cup firmly packed brown sugar
  4. 2 eggs
  5. 1 teaspoon vanilla extract
  6. 2 1/4 cups flour
  7. 1 teaspoon baking soda
  8. 1 2/3 cups white chocolate chips or coarsely chopped white chocolate
  9. 1 1/2 cups dried tart cherries
  10. 1 cup shelled pistachios, coarsely chopped
Directions:

Preheat oven to 350 degrees F.

In a large mixing bowl, beat butter and sugars until light and fluffy. Add eggs, one at a time and mix together. Stir in vanilla.

Combine flour and baking soda; gradually add flour mixture to butter mixture. Stir in white chocolate chips, dried cherries and pistachios. Drop by rounded tablespoonfuls onto ungreased baking sheets.

Bake for 10 to 12 minutes or until light golden brown. Do not overbake. Let cool on wire racks; store in a tightly covered container. These cookies freeze well.
