Ham and Collard Greens Soup

Ingredients:

  1. 2 tablespoons olive oil
  2. 1/2 onion, diced
  3. 4 cloves garlic, minced
  4. 1 1/2 pounds smoked ham, diced
  5. 4 cups low sodium chicken broth plus 2 cups water
  6. 1 bag (15 ounce) frozen black eyed peas
  7. 4 cups collard greens, coarsley chopped and large stems removed
  8. 4 tablespoons apple cider vinegar
  9. 1/4 teaspoon red pepper flakes
  10. hot sauce, optional
Directions:

In a large pot heat the olive oil over medium heat. Add the onion, garlic, and ham. Cook until onions are translucent and ham begins to brown, about 5-7 minutes.

Add broth, water and black eyed peas and bring to a boil. Reduce heat to low and cook until peas are tender, or about 30 minutes.

Add collard greens and cook until wilted, about 5-10 minutes. Stir in cider vinegar, pepper flakes and hot sauce if desired. Adjust seasoning to taste.
