Crunchy Radish-Olive Nachos

Ingredients:

  1. 4 cups corn tortilla chips
  2. 3/4 cup thinly sliced radishes
  3. 1/2 cup diced plum tomatoes
  4. 1/2 cup sliced ripe olives
  5. 1/4 cup sliced green onions (scallions)
  6. 1/3 cup creamy garlic/herb cheese spread (about 3 ounces), or shredded hot pepper Jack
Directions:

On two large paper plates, arrange an equal amount of tortilla chips in a single layer.

Sprinkle with radishes, tomatoes, olives and green onions; dot with cheese spread.

Microwave 1 plate at a time, on HIGH (100% power) until cheese melts, about 1 minute.

Serve immediately.
